Salmon, Cod & Omega-3s

My typical Sunday is like déjà vu every week: gym, shower, lunch, laundry, groceries and then dinner – with a ton of Netflix in between. Before I know it, it’s time to call it a night as a un-anticipate for Monday morning.

This past Sunday, I took inventory of what was needed to restock the fridge and cupboards while searching Pinterest for my week-long dinner plans. But the real question was, what can I whip up with the ingredients I had on hand… So this is what I came up with: Balsamic glazed cod with roasted tomatoes, baked beans and brown rice. Seriously, it was so easy.

I got the brown rice started since it takes about 40 minutes while I thawed my cod fillets. To prep, I halved some grape tomatoes, mixed them in a bowl with some balsamic vinegar & basil and topped it on my cod fillets. Popped them in the oven at 350 degrees for 10 minutes and there ya have it – heat up some baked beans or vegetable of choice and dinner is served!

Seems like our fish craze wasn’t over just yet… my boyfriend served up some delicious brown sugar and Dijon mustard cedar plank salmon with brown rice and veggies tonight. Yep, exactly what I like to come home to after an intense workout at the gym!It was such a simple recipe too; 4 TBS brown sugar mixed with 4 TBS Dijon mustard mixed and smeared on your salmon fish atop a cedar plank. He threw that bad boy on the grill while he made the sides, and before we knew it, we were laying on the couch in a food coma.

Talk about Omega-3s, right? I do not mind it at all since I’m a big fish fan and prefer it over meat. Also, like they say: the few legs the animal has, the healthier it is!
