Happy New Year, everyone! As the new year hits, I’m sure you’ve made some resolutions like I did. Aside from the ones focused on the mind, body and soul — I’m striving to try out MORE new recipes than I did before. Also, to use different methods for cooking… one being the pressure cooker that I got for Christmas!
A few people have told me that they are constantly wondering what I’ll be having for dinner tonight, and look forward to my posts on Instagram (hehe). So, to keep you all out of the mind boggling anticipation, I thought I’d share with you a few recipes I found that I’ll be giving a go this week. I, for one, prefer to plan out my meals beforehand so I know exactly what I need when I go to the grocery store. Well, that’s how my Sunday morning was spent! Oh, might I add, one of my resolutions was to eat less carbohydrates throughout the week and go meatless at least once a week. Since you can’t take the carbs and meat away from the man (my boyfriend), I tried to find recipes that he would be able to adapt to. Here you are:
Monday: Bruschetta Chicken
I love how this Bruschetta Chicken recipe can also double up as light fare. I plan to serve this with either a small side salad or roasted small red potatoes and toasted baguette!
Mmm, if there are two things that I love they’re mushrooms and onions. I’ll be making a small adjustment to this recipe — instead of regular fettuccine noodles I’ll be substituting spinach fettuccine.
Wednesday: Spicy South of the Border Chili
I found this recipe in my Fagor Pressure Cookers recipe book! One small adjustment I’ll be making is using ground turkey instead of ground beef. Sorry, no image was available… so I guess you’ll just have to wait until I make mine!

I just had Thai food yesterday and am currently eating my leftover as a blog (yellow curry noodles, yum!). With this recipe, I’ll be using eggplant instead of chicken, and most likely add a few more spice, double the amount of red curry paste called for, and of course add green onions since I LOVE THEM. Also, serve over brown rice.
Not sure what to make for Friday yet. Sometimes I’m only cooking for one, going out to eat and have other dinner plans. So as for now, Friday is questionable. If you have a favorite recipe, please feel free to share it with me! I’m always up for trying new flavors and whipping up something new in my kitchen!
