Pan Seared Salmon with Avocado Salsa & Cilantro-Lime Sauce

Tonight I was craving something light and refreshing — no meat that came from an animal with legs and no heavy carbs. Earlier in the morning, I took out two salmon fillets anticipating to create a tasty seafood dish for dinner. Well, that’s exactly what happened during my drive home from work! I thought, what do I have on hand that could pull this dish together? Most of the ingredients reminded me of a simple guacamole and boy do I love guacamole.
So here you have it, pan seared salmon topped with an avocado salsa and served with a cilantro-lime sauce, quinoa and broccoli. And get this, it’s all simple, fresh and healthy — and ready in less than 30 minutes!

For the salmon:

  • 2 salmon fillets
  • 2 Tbsp Olive oil + 1 Tbsp for pan
  • 2 Tbsp Paprika
  • 2 Tbsp Garlic powder
  • 1 Tbsp Dill
  • Salt
  • Pepper

For the avocado salsa:

  • 1 avocado, diced
  • 1/4 cup red onions, minced
  • 1 Tbsp cilantro, chopped
  • Juice from 1/2 of a lime

For the cilantro-lime sauce:

  • 1/3 cup plain Greek yogurt
  • 1/4 cup cilantro
  • 1 tsp garlic powder
  • Juice from 1/2 of a lime

For the sides:

  • 1 cup quinoa
  • 1 head of broccoli, chopped

Drizzle olive oil on both salmon fillets, coating both sides. Sprinkle with paprika, garlic powder, dill and salt + pepper to taste. Allow the fillets to marinate for 20 minutes.

In the meantime, let’s put your multi-tasking skills to work! Prepare your quinoa by rinsing it until the water runs clear; combine with 2 cups of water and bring to a boil. Cover and simmer for 20 minutes. Allow to cool — fluff when ready to serve. Also, get a pot of water boiling and add in your broccoli florets. Cook for about 5 minutes, drain.

To prepare the avocado salsa, prepare your ingredients and combine. Allow it to chill in the fridge until ready to serve.

To prepare the cilantro-lime sauce, put the ingredients into a blender/food processor and blend for about 30 seconds. Chill in the fridge until ready to serve.

Okay, now we’re ready to get the salmon fillets in the pan. Add olive oil to a pan — cook salmon on medium high for about 3-4 minutes on each side; 6-8 minutes total.

Now dish up: sauce, salmon and top with salsa. Serve and enjoy!
