Here is what you’ll need:
- 3/4 lb Lean Ground turkey
- 3 Tbsp A1 Sweet Mesquite BBQ Dry Rub
- 3 Tbsp McCormick Grill Mates Chipotle & Roasted Garlic
- 1/3 cup Panko Crumbs
- 3 Eggs (1 for the burger mix; 2 for poaching)
- 4 whole wheat English muffins
- 1/2 an avocado
- Romaine leaves
- BBQ sauce + mustard
Combine ground turkey, seasoning, panko crumbs and 1 egg. Mix thoroughly. Form 4 small patties about the size of an English muffin. Either throw them on the grill or use a Foreman like I did! Cook for about 10 minutes.
While the burgers are cooking, poach the eggs! Crack the eggs each into a small bowl. Bring a small pot of water to a soft boil and using a knife or spoon, create a whirlpool and slowly pour 1 egg in. Cook for 3 minutes. Remove and place on a paper towel covered plate. Repeat.
Slice and toast the English muffins, slice your avocado and get your romaine leaves ready.
Now, build your burgers and top with whatever condiments you’d like! I did the poach egg on one and sliced avocado with BBQ sauce and mustard on the other.
