It’s been a rough week for me so far, so it’s time to treat myself. Who else sees pizza as an indulgence? I DO! One thing I can’t get enough of is BBQ chicken pizza — the sweet and tangy sauce hits a weak spot. What if I told you I made this in TEN MINUTES!? Yep, GET ALL OVER IT… NOW.
I picked up some naan earlier this week — if you’re not familiar, it’s a popular Indian leavened flatbread. This seemed like a great alternative to pizza crust so I gave it a shot. Let’s just say, it’s a new favorite of mine, and it’s perfect for a delicious personal sized pizza. It’s light and fluffy with a bit of crunch all at the same time — way preferred over the regular pizza crust! This recipe serves 2, so feel free to adjust to fit your dining needs.
Here is what you’ll need:
2 pieces of whole grain naan
1 cup BBQ sauce — I had store bought honey BBQ that I used (I know, cheating!)
Handful of cilantro, finely chopped
1 cup cooked chicken, diced
½ cup shredded mozzarella cheese
¼ cup red onion, diced
1/2 cup mushrooms (optional)
2 tsp red pepper flakes
1 green onion, chopped
Preheat the oven to 350 degrees. Line a baking sheet with parchment paper and place naan on it.
Build your pizza: BBQ sauce, chicken, mozzarella cheese, red onion, mushrooms, red pepper flakes and green onion.
Bake for 8-10 minutes, and then broil for about 3 minutes. Enjoy one personal sized pizza all to yourself!
