One of the most popular side dishes at any picnic or BBQ is chicken, pasta or potato salad. It’s definitely one of my favorites but I’m not a huge fan of the mayo… at all. I typically regret indulging in a large serving, and most likely more than one serving. Wah… GUILTY. Have no fear, a HEALTHY alternative is here — pass on the mayo and opt for Greek yogurt instead!
I had some leftover oven roasted chicken I had prepared earlier this week and was contemplating what to make with it. Initially, I was thinking to add the chicken to my salad for lunch. But why make the romaine the star of the show when the chicken can stand in the spotlight? This healthy chicken salad is super easy to pull together and made with only 8 ingredients — things you probably already have on hand!This recipe made enough to pack two full servings for me and my boyfriend to take to work for lunch. Go ahead and have another serving, I won’t judge 🙂
Here is what you’ll need:
- 4 cups cooked chicken, shredded or thinly sliced
- 2 celery stalks, chopped
- 1 cup red onions, minced
- 1.5 cups shredded carrots, chopped
- 1 cup red grapes, halved
- 1.5 cups plain Greek yogurt
- 1.5 Tbsp Dijon mustard
- 1 Tbsp garlic powder
Combine all ingredients in a medium bowl and mix well. Serve immediately or chill in the fridge until ready to serve.
