Sausage & Quinoa Stuffed Peppers

With St. Patrick’s Day this past Tuesday, I saw some Irish-inspired ingredients at the grocery store such as Luck of the Irish O’ Garlic Italian Sausages. One of my favorite meals to make with sausage is stuffed peppers. What do I love most about stuffed peppers? I love that it can be “stuffed” with anything – from grains to meat to veggies – it’s really all up to you and your appetite!

I’m not a big fan of using green bell peppers for this dish. Instead, the sweet bell peppers (red, orange, yellow) are ideal. I used quinoa in mine but any type of rice also works. To the eye, it may not seem like whole lot but when you really think about what’s in these guys, you’ll realize you’re eating an entire meal!

So what are you waiting for? Stuff yourself!

Here is what you’ll need:

  • 2 large bell peppers – top sliced, inside hollowed (save the top of the pepper & dice for filling)
  • 1 Tbsp olive oil
  • 2 Italian sausages, casing removed
  • 1/2 cup onion, chopped
  • 1 cup mushrooms, chopped
  • 2 cups chopped spinach
  • 3/4 cup quinoa
  • 2 tsp red pepper flakes
  • 1 tsp salt
  • 1 tsp pepper
  • 1 tsp garlic powder
  • 1 tsp chili powder
  • 2 green onions, chopped
  • 1/3 cup parmesan

Preheat the oven to 400 degrees. Cook quinoa according to package.

Slice the top of the bell peppers and hollow out the insides. With the top of the pepper, remove the stem and dice the remaining part.

Heat olive oil in a large pan and saute sausage until brown. Add onion, mushrooms and chopped pepper – cook until onions are tender. Add spinach and mix until wilted. Add quinoa, red pepper flakes, salt, pepper, garlic powder, chili powder and green onions – saute until combined. Lastly, stir in parmesan and cook until melted and combined thoroughly.

Fill each bell pepper with a generous amount of mixture; pack it in there good! Put the stuffed peppers in a baking dish and bake for 25 minutes.

Dish up… and I’m sure you have it from there!

  1. Not normally a fan of stuffed peppers because I dislike green peepers but tried this recipe anyway because it looked so good. It was amazing with the orange peppers – thanks for the idea! 😃
