Spinach, Feta, Sundried Tomato, Avocado Grilled Cheese

I’m taking this week a little lighter than usual, handing off half of the cooking to my boyfriend! In light of that, why not make dinner a little more simplistic when I can? As most of you may know, I love tomato soup. Whether it’s -10 degrees or 90 degrees out, tomato soup is always appropriate.

I have this awesome recipe for creamy tomato basil soup I love whipping up but let’s be lazy tonight.As much as I don’t like most cheese out there, I do crave a good grilled cheese every now and then. Weird, I know. Forget the cheddar or whatever other cheese is normally used. Let’s put a little spin on this. Who says a grilled cheese can’t be fancy? Get that griddle pan ready because once you take a bite of this Spinach, Feta, Sundried Tomato, Avocado Grilled Cheese – you’ll be in grilled cheese heaven.

…and your sandwich may even take a dip in the pool of tomato soup.

Here is what you’ll need:

  • 2 slices of bread per sandwich (I used double protein bread)
  • Crumbled feta cheese
  • Spinach
  • Sundried tomatoes, chopped
  • Avocado
  • Butter (I used butter spread with flaxseed oil)
  • Dried parsley
  • Tomato soup, canned or homemade

Depending on how many sandwiches you make or how much of each ingredient you prefer, make this to your own preference πŸ™‚ I’ll provide you with the basics… you can go over-/underboard (is that even a word?) from there!

Start by cooking the spinach until slightly wilted; add sundried tomatoes and cook for another minute.

Then, build your sandwich: bread, feta, spinach & sundried tomatoes, avocado, feta, bread.

Heat the butter in a pan and add parsley flakes. Once it’s sizzling hot, add the sandwich and ‘grill’ on medium-high heat for about 2 minutes on each side, or until browned.Serve alongside tomato soup & enjoy!
