Black Bean Burger

Did you know that I gave up red meat? Yep, a new thing I’m trying. It’s not that hard because I really don’t eat it much in the first place; and burgers I’m usually a turkey gal. But to be honest, veggie burgers of any sort are actually my favorite!

Some people don’t like them because of the texture – that’s actually what I really like about them.Β

But, it’s hard to find a good veggie burger. And by good, I actually mean decent. I’ve had a few here and there, but I’ve got to say most of the ones I’ve come across just taste so… frozen.


I will say that one of my favorite burgs comes from somewhere VERY nearby… my kitchen πŸ™‚ Double stacked and accompanied by a few of my favorite things.

I’ve had a pretty carb heavy week, so I opted out of the bun; and no cheese for me! I’m fine with a huge veggie party!

Okay, and you know it isn’t complete with an egg. Oozing and all…

Black Bean Burger

Perfect with some sweet potato fries.


1 can black beans, drained and rinsed
1/2 green pepper, minced
1 green onion, sliced
1 Tbsp garlic powder
1 Tbsp chili powder
1/2 Tbsp cumin
1 tsp hot chill sauce
1 egg
1/2 cup seasoned breadcrumbs
salt and pepper, to taste

TOPPINGS (optional):

Spicy mustard, or any condiments of choice

Place beans in a medium bowl; smash until smoothΒ with a fork. Add peppers, green onions, garlic powder, chili powder, cumin, hot chili sauce and an egg. Mix thoroughly. Add breadcrumbs and combine. Form into 4 patties and place on a plate, then refrigerate for 30 minutes.

In a lightly greased skillet, pan fry the black bean patties – about 7 minutes on each side.Β In a separate pan, sautΓ© onions and mushrooms. In a smaller pan, cook an egg (over easy is my favorite!).

Stack it up high, and dress it how you want!
