Veggie Quinoa Bake

So, you know what happened today? It snowed. Okay, light drizzle of snow or sleet – but I’m still considering it snow. WHY? Does that mean that winter is upon us? Not a happy camper over here…

The other day I made this super warm, comforting and yummy veggie quinoa bake that just hunkered in my stomach like my body is with blankets right now! With the week I’ve had, a super easy casserole dish was on the top of my list. A colorful dish is always my favorite dish because that means it’s loaded with veggies (my favorite). And, green is totally the way to go!

Veggie Quinoa Bake

I almost didn’t want to post this because my pictures were subpar. I blame the lack of natural light that comes into my apartment… and the fact that it gets dark at 5pm! But, last night I made a purchase that will help with that – a Lowel Ego Digital Imaging Fluorescent Light. Now my food photos will be gorgeous no matter what time of the day!

Anyways, here’s all the veggie and quinoa you’ll want for tonight – all in a tidy little casserole. It’s easier than you’d think, and tasty without the guilt. Okay, and it’s even better the next day!

HERE IS WHAT YOU’LL NEED:

1 cup coconut milk
2 cups water
2 cups chicken (or veggie) broth
1 cup quinoa, rinsed
½ cup whole wheat flour
1 Tbsp corn starch
3-4 cups broccoli
1 tomato, diced
1 small onion, diced
1 cup kale, chopped
1/3 cup Parmesan cheese
1 Tbsp butter spread
1-2 Tbsp Salt (your preference)
1 Tbsp pepper
1 Tbsp Hot chili powder
½ Tbsp Smoked paprika
1 Tbsp Garlic powder
1 Tbsp Onion powder
1 tsp Basil
½ Tbsp Italian season
2 green onions, chopped

Preheat the oven to 400 degrees.

Boil coconut milk and chicken broth and simmer for 2 minutes. In a separate bowl, mix water, flour, chili powder, paprika, garlic powder, onion powder, basil, Italian seasoning, salt and pepper. Add in quinoa. Slowly whisk in the coconut milk and chicken broth.

In a 9×13 greased casserole dish, dump in the mixture. Bake uncovered for 30 minutes. In the meantime, put chopped broccoli into a large bowl and pour boiling water over it. Let it sit for about 2 minutes. Drain and rinse in cold water.

After 30 minutes is up, stir in butter spread, kale, tomatoes, onions, and broccoli. Sprinkle parmesan cheese and green onions on top, and a dash of salt and pepper. Bake for another 15 minutes.
