I love fajitas – they’re definitely one of my go-tos when I’m out at a Mexican restaurant. I mean, really good fajitas. Fresh veggies, flavorful chicken and… you know. But, what ultimately makes a good fajita great? Spice, and lots of it! I’m convinced that my taste buds are on another level where they simply cannot detect if something is hot vs mild, which means I am not the person to ask if a dish is “too spicy” or not.
A couple months ago, I invested in a cast iron skillet. Ideally it was for one specific recipe, but in reality it’s an essential kitchen piece. The best part about it is the versatility and convenience of going straight from the stove top to the oven – and that’s what this Spicy Chicken Fajita Skillet is all about!
Everything you love about a chicken fajita is packed into one and it tastes even better than ever. Forget the flour tortilla – who needs ’em when you’ve got all of this? Yeah, all of this.
HERE IS WHAT YOU’LL NEED:
1 Tbsp olive oil
1 large chicken breast, cut into thin strips
2 bell peppers, sliced
1 onion, sliced
1 clove garlic, minced
1 jalapeno, seeded and chopped
1/2 cup corn
1/2 cup black beans, rinsed and drained
1/2 cup taco sauce
1 cup brown rice, cooked (slightly al dente)
1 cup mozzarella cheese
1/2 cup cilantro, chopped
1 Tbsp smoked paprika
1 Tbsp granulated garlic
1 Tbsp hot chili powder
1/2 Tbsp cayenne pepper
1/2 tsp cumin
1 tsp salt
1 tsp pepper
Preheat the oven to 375 degrees. Combine all spices in a small bowl and set aside. Add 1 Tbsp of the spice mixture to the chicken strips, and reserve the rest for later.
In a 10.25-inch cast iron skillet on medium-high heat, add 1 Tbsp olive oil and cook seasoned chicken for 2-3 mins per side. Set aside. To the pan, add peppers, onions, jalapeño, garlic and corn – cook for 5 minutes stirring occasionally. Add 2 Tbsp of the spice mixture and cook for another 3 minutes stirring frequently. Turn the heat down to medium low. Add beans, taco sauce and the remainder of spices to the skillet. Add chicken. Stir to combine.
Make an open well in the middle of your pan (push all of your ingredients to the sides to make a donut hole) and fill it with brown rice. Sprinkle mozzarella cheese on top and finish with cilantro.
Finish it off in the oven for 20 minutes. Mmm… would you just look at that cheese?!
Add sliced avocado to your finished dish for some added freshness and extra (healthy) indulgence. Go ahead and have seconds… I won’t judge. Because I did!
